Apple Pie Whole Wheat Muffins
For breakfast on the run, or a leisurely weekend treat, these apple pie muffins will make your kitchen smell like fall!
Makes 12 muffins
Ingredients
2 cups whole wheat pastry flour
2 tablespoons ground flaxseeds
2 teaspoons baking powder
1 teaspoon baking soda
⅓ cup granulated sugar
1 teaspoon cinnamon
⅛ teaspoon nutmeg
1 cup unsweetened applesauce
2 tablespoons melted butter
⅓ cup milk
1 chopped large apple
Directions
1. Preheat oven to 400 degrees.
2. In a large mixing bowl combine dry ingredients; flour, ground flaxseeds, baking powder, baking soda, sugar, cinnamon, and nutmeg.
3. Add in applesauce, melted butter, milk, and chopped apples. Stir until well combined.
4. Divide the batter evenly among muffin cups.
5. Bake for 15-20 minutes, until golden brown.
6. Allow to cool and store in an airtight container.
