BETHEL – Suzanne Dunham will present a lecture and workshop series on gluten (wheat, barley, rye) sensitivities, known as celiac disease and gluten-intolerance, and associated conditions/diseases and sensitivities, starting Thursday, Sept. 13.

Session I, from 6 to 8 p.m. Sept. 13 in Telstar High School Room 106, will explore the sources of gluten, symptoms, treatment, food/grain alternatives, resources and ways of coping with – and enjoying – a gluten-free life. The session will include preparing a snack with alternatives grains.

Session II, on Thursday, Oct. 11, will focus on details of nutrition, herbs and other alternatives – an exploration of food and relaxation techniques as sustenance and medicine (gluten free refreshment included).

Session III on Thursday, Oct. 25, will be a cooking class using alternative grains. Participants will prepare a gluten-free meal. Cost is $15 a class, $40 for all three if paid in full by Monday, Sept. 10. Registration deadline is Sept. 10 or a week before each class.
