Now that you have bagged a moose and have all of that meat, what are you going to do with it? Even if you store some in the freezer for later, you will still have to do something with the remaining meat. How about some recipe ideas?

Fall Apart Moose

2 medium onions, diced

1 lb. sweet carrots, diced

4 lb. moose rump roast

2 cloves garlic, sliced into small pieces

2 c. water

1 pkg. onion soup mix

Salt

Pepper

2 beef bouillon cubes

2 T. cornstarch

Get out a large slow cooker and turn it on high. Add onions, carrots, moose roast, garlic, water and onion soup mix. Salt and pepper to taste. Cover and cook for 4 hours. Drain juice from meat into saucepan. Add bouillon cubes and bring to a boil. Add cornstarch and stir until juice turns thick and clear. Pour juice back into slow cooker with moose and cook for another hour. When moose is done, slice into thin slices and serve with gravy and potatoes or rice.

Moose Sloppy Joes

1-1/3 lb. ground moose meat

2/3 c. onion, diced

2/3 c. green pepper, diced

2/3 pkg. taco seasoning mix

1/6 c. brown sugar

1/6 c. diced green chilies, drained

1/6 c. vinegar

8 oz. jar mild picante sauce

Brown ground moose meat in a skillet with onion and drain. Return mixture to skillet and add green pepper, taco seasoning, brown sugar, chilies, vinegar and picante sauce. Cover and simmer for 1 hour or until thickened. Serve on hamburger buns.

Moose Roast in

Brown-in-Bag


1 T. flour

1/2 c. dry red wine

Salt

Pepper

3 to 4 lb. 4-inch-thick roast

1 medium onion, quartered

2 bay leaves, crumbled

Preheat oven to 350 degrees. Shake flour in a 10×16-inch brown-in-bag and place in a 2-inch-deep roasting pan. Pour wine into bag and stir until well mixed. Rub salt and pepper on meat and place in bag. Sprinkle onion and bay leaves around roast. Close bag and make six 1/2-inch slits in top. Cook for 2 to 2-1/2 hours.

Spicy Moose Stew

6 strips lean bacon, diced

1 lb. moose meat, cubed

3 carrots, cut into wheels

1/2 medium turnip, diced

2 large onions, diced

2 c. fresh mushrooms, quartered

3 cloves garlic, diced

1 c. red wine or beef broth

1 c. water

1 T. cornstarch

1 t. salt

1. black pepper

1 T. tomato paste

1 fresh jalapeo pepper, seeded and diced

1/2 t. hot sauce

1/2 t. dried marjoram (optional)

Preheat oven to 350 degrees. Fry bacon until crisp, remove from pan and reserve fat. Brown moose meat in a small amount of bacon fat, reduce heat, cover and cook thoroughly. Remove from pan. Fry carrots, turnip and onions until lightly browned, adding a little fat, if needed. Stir in mushrooms and garlic and cook another minute. Combine wine and water and add remaining ingredients to frying pan. Add moose and bacon and spoon into a baking dish with a tight lid. Bake 30 minutes or until moose is tender.
