No matter what they are called, pancakes, blintzes or crepes, all are easily mixed and made from simple batters. John Bitz of Lewiston is becoming well-known for his confections, which he refers to as Crepes Jubilee. He has been preparing them for the past five years at the Little Hobo Restaurant on Main Street, where he is a part-time chef. Bitz has retired twice from his career as a chef and restaurant manager, but he likes to keep busy and remain in the public eye, so he left retirement once again. He worked for the Howard Johnson Restaurant chain for 35 years.
