FARMINGTON — Rachael Jackson of Wilton is no stranger to the restaurant business. She owned and operated two western Maine eating establishments – a seasonal restaurant at the former Trail’s End Motel in Rumford Point and the Bear River Cabins in Newry. Next month, Jackson will open Farmington D…. in what used to be Boivin’s Harvest House.
“People ask me if I am crazy. The restaurant business is tough but I’ve had it in my mind to open a restaurant in Farmington for a long time,” explained Jackson.
Jackson jumped on the opportunity to purchase the property when it came up for sale.
She plans to keep popular Harvest House items on the menu while adding her own touch. “Just because we create a menu doesn’t mean we are stuck with it forever. The big thing is to listen to our customers and make adjustments as necessary,” Jackson stated.
The menu will include Maine-produced food and beverages. Food cooperatives and butchers will provide elements for menu items, giving Farmington D…. fare a local flavor. Jackson is very excited to offer wine produced by John and Patty Cormier, owners of Kennebec Home Brew Supplies.
“I am taking the best from the Harvest House and tweaking it a little. Hopefully the two together will make this place even more awesome,” stated Jackson.
That tweaking includes bringing in fun decor which reflects her passion for the American diner. She owns two of the classic dining structures, including the former Farmington Diner which closed in 2007. Her hope is to someday combine the two retro buildings to bring the classic diner experience back to Farmington.
“The name Farmington D…. is like a game of Hangman. We can fill in the word ‘diner’ when it comes time,” Jackson explained.
Former Harvest House cook Kathy Boivin is working side-by-side with Jackson to get the restaurant ready for opening.
“She’s been an angel. She knows the building, the customers, and the staff,” remarked Jackson.
Jackson is in the process of building a team of employees. She said she has had a number of applicants but is still looking for people. “No experience is necessary but a good attitude is,” noted Jackson.
Applications are being accepted at the restaurant, 367 Wilton Road.
