DEAR SUN SPOTS: We are third-grade students in Northern Virginia. In third grade, we do state reports and we have chosen your state! We are very excited to learn more about the great state of Maine as we work on our report.

Most of the information that we get for our reports will be from books and websites. We also like to get information from people who live in the state, too. This is why we are writing to you. We were hoping that you would be willing to send us some items to help us learn more about the best things in your state. It could be things like postcards, maps, pictures, souvenirs, general information, this newspaper article or any other items that would be useful. DEAR SUN SPOTS: Is there someone out there who has the recipe for icebox cake? I have lost my recipe. If anyone has this recipe I would be very grateful. Thank you. — M.J.B, Lewiston.

ANSWER: Here is a recipe for classic icebox cake from food52.com:

Ingredients

  • 2 cups heavy cream
  • 1 teaspoon vanilla
  • 13 ounces Nabisco chocolate wafers (1 1/2 packages), or other thin cookie

With a whisk or a stand mixer fit with a whisk attachment, whip the cream and vanilla together to stiff peaks. On a cake stand or large plate, arrange 7 wafer cookies in a circle (1 in the middle, six around the edges). Spread a layer of whipped cream on top, then another circle of cookies, then whipped cream, until you run out. Finish with a top layer of whipped cream. Refrigerate the cake overnight (or for at least 8 hours). Serve.

DEAR SUN SPOTS: Please save the date for Holy Savior School’s benefit auction on Friday, April 7, at the American Legion in Rumford.

It has been a phenomenal year for Holy Savior Catholic School. With the leadership and guidance of our new Pastor, Father Nathan March, the transition to Blended and Project Based Learning approaches and the St. Dominic Academy partnership, we are absolutely thrilled to be accomplishing our desired goals.

Our 2017 Annual Live Auction is well under way. The committee is busy ensuring a fun-filled, entertaining evening for all, with our hilarious auctioneer Mark Prevost at the microphone.
